Recipe: Mini-Pizza 3 Ways

Mini-Pizza 3 ways recipe

Ingredients

Base (4 portions)

  • 6 English muffins
  • 1 1/2 to 2 cups light cheese (180g)
  • 1 x Loounie’s magic tofu recipe :
    • 1/2 tablespoon olive oil
    • 1/2 454g block firm tofu
    • 1/2 tablespoon maple syrup
    • 1/2 tablespoon soy sauce
    • 1/2 tablespoon lemon juice
    • 1/4 cup nutritional yeast

a) Pesto Version (4 portions):

  • 60 ml pesto (3 teaspoons/serving)
  • 1 cup fresh spinach

b) BBQ Version (4 portions):

  • 180 ml BBQ sauce (3 tablespoons/serving)
  • 1 bell pepper, diced

c) Traditional Version (4 portions)

  • 180 ml pizza sauce (3 tablespoons/serving)
  • 1 bell pepper, diced
  • 1/2 cup diced mushrooms
  • 1/4 cup sliced black olives

Steps

  1. Dry the tofu with a clean cloth, then break it up into small pieces with your fingers.
  2. In a large skillet heated over medium heat, add the oil, then toss the tofu directly with the maple syrup, soy sauce, lemon juice and nutritional yeast. Cook for approx. 8-10 minutes, stirring regularly, until golden brown.
  3. In the meantime, cut English muffins in half lengthwise and place on a parchment-lined baking sheet.
  4. Sauce the English muffins with your choice of sauce and toppings. Top with cheese and tofu.
  5. Bake at 375*C for 10 to 15 minutes, or until cheese is melted. Serve.

  • Protein : 33-36 g
  • Carbs : 44-67 g

  • Fat : 18-25 g

Tips

  • Don’t hesitate to make the recipe base in triplicate (12 servings) so you can try all the versions, have extras for lunches or even have meals ready for quick meals in the freezer.
  • Tofu can also be baked at 375*C for about 25 minutes or until golden brown.
  • Pizzas can also be cooked in the AirFryer at the same temperature for around ten minutes.
  • Loounie’s signature magic tofu is also available ready-to-eat in grocery stores (IGA, Super C and Avril Supermarché Santé) and can be a quick solution for dinners on the go. It can be put in wraps, sandwiches or directly on the plate to add protein. It can be eaten hot or cold.
  • Psss…your urine might be neon yellow after eating magic tofu. Don’t worry, it’s just the excess vitamin B12 contained in nutritional yeast that goes down the drain, and it’s perfectly normal. Nutritional yeast is also an excellent source of protein and fiber, as well as having a cheesy taste: A MUST!
