Protein cheesecake verrines

Ingredients

  • 1 500g container of cottage cheese (about 2 cups)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3 cups frozen berries
  • 1 cup graham cracker crumbs (or about 24 graham cracker wafers)

Instructions

  1. Using a food processor or hand mixer, blend the cottage cheese, maple syrup, and vanilla until smooth.
  2. If you plan to eat your verrine right away, reheat the berries in the microwave for about 2 minutes until thawed.
  3. Layer the graham cracker crumbs, cottage cheese mixture, and berries alternately in 3 (meal size) or 6 containers (snack size). Enjoy with your next meal or snack.

Tip

If you prepare the verrines in advance and prefer your Graham cracker crumbs to be crispier, add them as a garnish just before serving. If you are using wafers, feel free to leave larger pieces.
