Ingredients

  • 4 peaches, diced (or about 2 ½ cups)
  • 1 tablespoon of maple syrup
  • 1 cup PVT (textured vegetable protein)
  • 1/2 cup quick oatmeal
  • 1/4 cup all-purpose flour
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup butter at room temperature
  • 1/8 teaspoon salt

Steps

  1. Preheat oven to 375*F (190*C)
  2. Butter a 20 cm (8 in) square mold, then add the peach pieces and maple syrup. Mix and distribute in the mold.
  3. In a bowl, mix the remaining ingredients, then distribute the mixture over the peaches.
  4. Bake for 30-35 minutes or until golden brown. For a crispier effect, broil for an additional 1 to 2 minutes, constantly monitoring the cooking to prevent the crispiness from burning. Serve with a nice scoop of ice cream!

Croustade can easily become a satisfying lunch given its higher protein content with the use of PVT. In this case, a double or even triple portion could be taken to ensure that it reflects a meal portion. Don’t hesitate to use it as a snack as well since its protein and carbohydrate content makes it ideal for filling you up and stocking up on energy.

PVT: textured vegetable protein!

Did you know that PVT is produced from soy flour? Since it keeps for a very long time, it can easily be used to add protein to your meal. As an added bonus, it can be used in both sweet and savory recipes. You can grind it to add it to a muffin recipe, add it directly to yogurt or even rehydrate it to easily replace meat. To rehydrate it, simply add 210 ml of boiling water or broth to 1 cup of TVP, stir, then let sit for 5-10 minutes. Good food!
