Smoked Salmon Pizza
5 x 100g naan breads
250g smoked salmon
1 150g packet boursin (or cream cheese)
Toppings: capers, red onions, chives, etc.
Zucchini Coleslaw
1 small red cabbage (about 5 cups, chopped)
3 zucchinis (about 2 1/2 cups, chopped)
1 bunch fresh parsley (approx. 2 cups, chopped)
6 tablespoons light mayonnaise
2 tablespoons garlic mayonnaise (e.g. Amir or regular mayonnaise with a little garlic powder)
2 tablespoons lemon juice
2 teaspoons white wine vinegar
½ teaspoon garlic powder
½ teaspoon dried parsley
Salt and pepper to taste
Steps
Preheat oven to 350*F (*C)
Spread naan breads with boursin, then add smoked salmon, breaking into pieces. Garnish with toppings of your choice. Bake for ten minutes.
Meanwhile, prepare the salad by putting the cabbage, zucchini and parsley through a chopper (or chop chop if you affectionately call it that like I do ;)) and place in a large bowl.
In a small bowl, combine mayonnaises, white wine vinegar, garlic, salt and pepper. Add to salad. Adjust seasoning. Serve with a warm (or chilled) smoked salmon pizza.
