1 egg
1 English muffin
1 teaspoon of mayonnaise
30g sliced light cheese
1 slice of tomato
1/4 cup of spinach
Salt and pepper to taste

STEPS
Oil a ramekin, then break an egg into it for the single sandwich and two eggs for the double sandwich. Mix well, making sure the yolks are well broken up. Cook in the microwave for 2×20 seconds for the single sandwich or 2×30 seconds for the double. Flip and cook for 10 seconds (single) or 30 seconds (double), or until the egg(s) is cooked.
Meanwhile, toast the English muffin in a toaster. It can also be reheated in the microwave for 15 to 20 seconds.
Spread the mayonnaise on one side of the English muffin, then place the egg(s), cheese, tomato, spinach on it to create the sandwich. Taste.
